Cajun Frittata

This cajun-influenced breakfast features Cajun Hollar Green Onion & Mustard Seed Sausage combined with peppers & onions, eggs, Crema, and fresh cilantro. Topped with a salad mixture of Arugula greens and Lemon vinaigrette.

Ingredients

Sausage & Peppers

1 package of our Cajun Hollar Green Onion & Mustard Seed Sausage sliced in halves

Sliced Onion & Peppers (Red, Yellow, Orange, and Green) 1 each

2-3 Tbsp of Olive Oil

Egg Mixture

6 eggs blended

1/3 cup Half & Half

Fresh chopped Cilantro

½ cup Grated Cotija Cheese

Salt & Pepper to taste

Pre-heat oven broiler

Salad

1 ½ cup Arugula Lettuce

1/3 cup thin sliced onion

2-3 Tablespoons of Lemon Vinaigrette

Garnish

Crema

Chopped Cilantro

Grated Cotija cheese

instructions

Med/High heat sauté pan add the olive oil, onion/pepper mixture and cook for 3-5 min. Next add the Cajun Hollar Green Onion & Mustard Seed sliced sausage then sauté until the onions become translucent (roughly 6-8 minutes.

Add the egg mixture to the sausage, peppers & onions while stirring until the bottom of the eggs are set

Place sauté pan in the broiler and cook until the eggs are set on top.

Remove from the pan onto a serving plate or cutting board.

Garnish with a drizzle of Crema, chopped cilantro and Cotija cheese.

Top with the salad mixture of Arugula, lemon Vinaigrette, and sliced onion
